Westby cooperative celebrates first-in-the-nation cottage cheese manufacturing upgrade

Wisconsin's only cottage cheese manufacturer now has the nation's only closed vat system that can increase production by 50 percent using less manual labor.

Westby Cooperative Creamery operates out of a cheese plant built 100 years ago on Main Street of its small community in Vernon County.

But now inside of the century-old building is cutting-edge technology that will help the farmer-owned cooperative capitalize on booming demand for cottage cheese.
